Never liked cooking much, not even for a family. Now that I am a party of one, it's a real pain.
So I keep it simple--roasted vegetables, soup, meat when it's on sale. Coffee and a carb for breakfast. Fruit. Cheese and crackers. PB&J. If I make more than one portion, it's lunch the next day.
But when I have company, I go all deer-in-the-headlights when it comes to mealtime. With friends, we head to a restaurant. When my daughter and her family comes to stay, we rely on take out, easy meals she prepares or her dad's great cooking.
While babysitting tonight I enjoyed leftover lemon orzo soup and baklava she brought back from her friend's house.
Any meal is a memorable meal if I don't have to think about cooking it or cleaning up afterward. A no-worries banquet in my book.
